Pesto Chicken Roll

Pesto Chicken Roll is a healthy and flavorful meal featuring tender chicken, fresh spinach, and vibrant bell peppers wrapped in a whole wheat tortilla with a delicious pesto spread. This easy-to-make dish is not only quick but also packed with nutrients, making it a perfect option for a wholesome lunch or light dinner.
For a Serving Size of Two:
Ingredients:
- 200 grams chicken breast, thinly sliced
- 30 grams pesto sauce (homemade or store-bought)
- 50 grams whole wheat wrap or tortilla
- 50 grams spinach leaves
- 50 grams bell peppers, thinly sliced
- 1/2 tsp olive oil
- Salt and pepper to taste
Procedure:
- Season the chicken slices with salt and pepper. Heat 1/2 tsp olive oil in a pan and cook the chicken until fully cooked and no longer pink, about 5-7 minutes.
- Spread 15 grams of pesto sauce on each tortilla.
- Layer the spinach leaves, bell peppers, and cooked chicken slices on top of the pesto.
- Roll the tortillas tightly and slice in half. Serve immediately or wrap in foil for later.
