Pineapple Fried Rice

Pineapple Fried Rice is a vibrant, flavorful dish that combines sweet pineapple with savory spices and colorful vegetables. This tropical-inspired fried rice is perfect as a main or side dish, adding a refreshing twist to classic fried rice.
For a Serving Size of Two:
Ingredients:
- 1 cup cooked jasmine rice (preferably chilled)
- 1/2 cup fresh pineapple, diced
- 1/4 cup carrots, diced (about 30 grams)
- 1/4 cup bell pepper, diced (about 30 grams)
- 1/4 cup green peas, fresh or frozen
- 1 small onion (about 50 grams), finely chopped
- 2 cloves garlic, minced
- 1-2 green onions, chopped
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1/2 teaspoon curry powder
- 1/4 teaspoon turmeric powder (optional, for color)
- Salt and pepper to taste
- 1 tablespoon oil (sesame or vegetable)
- Fresh cilantro or basil for garnish
- 1 tablespoon cashews or roasted peanuts (optional, for topping)
Procedure:
- Heat oil in a large skillet or wok over medium-high heat. Add garlic and onion, sautéing until fragrant.
- Add carrots, bell pepper, and peas, cooking for 2-3 minutes until slightly tender.
- Add the diced pineapple and stir-fry for another minute, letting it caramelize slightly.
- Stir in the cooked rice, breaking up any clumps. Add soy sauce, curry powder, and turmeric powder, mixing well to coat the rice evenly.
- Season with salt and pepper, adjusting to taste, and cook for another 2-3 minutes until everything is heated through.
- Garnish with green onions, fresh cilantro or basil, and roasted cashews or peanuts if desired.
