Pineapple Fried Rice

Pineapple Fried Rice is a tropical delight that combines the sweetness of pineapple with the savory flavors of fried rice. For a Serving Size of Two:

Ingredients:

  • 60 grams uncooked rice (preferably jasmine or brown)
  • 200 grams diced fresh pineapple
  • 50 grams finely chopped bell pepper
  • 50 grams finely chopped carrot
  • 30 grams green peas
  • 30 grams finely chopped onion
  • 1 tablespoon soy sauce
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon minced garlic
  • 2 teaspoons sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh coriander leaves, chopped
  • Salt (to taste)

Procedure:

  • Rinse the uncooked rice under cold water until the water runs clear. In a pot, combine the rice with 120 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked. Once done, fluff with a fork and let it cool slightly.
  • Heat the oil in a large skillet or wok over medium heat. Add the chopped onion, ginger, and garlic, sautéing until fragrant and the onion is translucent.
  • Add the chopped bell pepper, carrot, and peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  • Add the diced pineapple and stir well, cooking for an additional 2 minutes to warm the pineapple and combine flavors.
  • Add the cooked rice to the skillet, followed by soy sauce and black pepper. Mix everything well, ensuring the rice is evenly coated and heated through. Adjust salt and pepper to taste.
  • Remove from heat and garnish with fresh coriander leaves. Serve hot.
