Pink Protein Pancake

These Pink Protein Pancakes are visually appealing, thanks to the beetroot that gives them a natural pink hue. High in protein and fiber, they’re perfect for a balanced breakfast that’s both satisfying and nutritious.

For a Serving Size of Two:

Ingredients:

  • 60 grams oats flour
  • 30 grams grated beetroot
  • 40 grams Greek yogurt
  • 20 grams protein powder (optional)
  • 1 egg
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon coconut oil

Procedure:

  1. In a blender, combine oats, beetroot, Greek yogurt, protein powder, egg, cinnamon powder, baking powder, and vanilla extract. Blend until smooth.
  2. Heat a non-stick pan over medium heat and add a small amount of coconut oil. Pour a ladle of batter onto the pan, forming a small pancake.
  3. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook the other side until golden.
  4. Stack pancakes and garnish with fresh berries, a sprinkle of seeds, or a dollop of yogurt if desired.
