Pink Protein Pancake

For a Serving Size of Two:
Ingredients:
- 60 grams oats flour
- 30 grams grated beetroot
- 40 grams Greek yogurt
- 20 grams protein powder (optional)
- 1 egg
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon coconut oil
Procedure:
- In a blender, combine oats, beetroot, Greek yogurt, protein powder, egg, cinnamon powder, baking powder, and vanilla extract. Blend until smooth.
- Heat a non-stick pan over medium heat and add a small amount of coconut oil. Pour a ladle of batter onto the pan, forming a small pancake.
- Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook the other side until golden.
- Stack pancakes and garnish with fresh berries, a sprinkle of seeds, or a dollop of yogurt if desired.
