Pita Pockets

Pita Pockets are a wholesome and satisfying snack, filled with a vibrant mix of chickpeas, fresh vegetables, and crumbled feta, all nestled in warm, soft whole wheat pita bread. A spread of hummus adds creaminess, while a drizzle of olive oil and a squeeze of lemon juice enhance the flavors.
For a Serving Size of Two:
Ingredients:
- 2 whole wheat pita breads
- 60 grams cooked chickpeas
- 50 grams mixed salad greens (lettuce, spinach)
- 50 grams sliced cucumber
- 50 grams halved cherry tomatoes
- 30 grams thinly sliced red bell pepper
- 30 grams crumbled feta cheese
- 2 tablespoons hummus
- 2 teaspoons olive oil
- Salt and pepper to taste
- A squeeze of lemon juice
Procedure:
- In a bowl, combine the cooked chickpeas or grilled chicken with the mixed salad greens, cucumber, cherry tomatoes, bell pepper, and crumbled feta or paneer if using.
- Drizzle the olive oil over the salad mixture. Add salt, pepper, and a squeeze of lemon juice. Toss everything together until well combined.
- Lightly warm the pita breads in a dry skillet or in the oven for a few minutes until soft and pliable.
- Cut each pita bread in half to create pockets. Open the pockets gently and spread a layer of hummus or tzatziki inside.
- Stuff each pita pocket with the prepared salad mixture. Be careful not to overfill to avoid tearing the bread.
- Serve the pita pockets immediately as a healthy and filling snack.
