Plantain Crisps with Avocado Dip

Plantain Crisps with Avocado Dip is a delightful and crunchy snack that brings together the sweet, savory flavors of baked plantain crisps paired with a creamy, zesty avocado dip. This combination makes for a perfect appetizer or healthy snack.

For a Serving Size of Two:

Ingredients:

  • 2 ripe plantains (about 300 grams)
  • 1 tablespoon olive oil or coconut oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon garlic powder (optional)
  • 1 ripe avocado (about 150 grams)
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Procedure:

  1. Preheat your oven to 200°C (400°F). Peel the plantains and slice them thinly (about 1/8 inch thick) using a sharp knife or a mandoline.
  2. In a bowl, toss the plantain slices with olive oil, salt, paprika, and garlic powder until evenly coated.
  3. Arrange the slices in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until the crisps are golden brown and crispy. Keep an eye on them to avoid burning.
  4. While the plantains are baking, prepare the avocado dip. In a bowl, mash the avocado with a fork. Add lime juice, minced garlic, salt, and pepper, mixing until smooth and creamy. If desired, stir in chopped cilantro for added flavor.
  5. Once the plantain crisps are done baking, remove them from the oven and let them cool slightly. Serve warm with the avocado dip on the side.
