Poha Cutlets

Poha Cutlets are a flavorful and nutritious snack or meal option that combines poha with an assortment of vegetables and spices. These cutlets are crisped up in a skillet for a satisfying crunch, while the poha provides a light yet filling base. With a blend of spices and fresh coriander, these cutlets offer a tasty, wholesome option for any time of day.
For a Serving Size of Two:
Ingredients:
- 60 grams poha
- 100 grams grated carrot
- 50 grams finely chopped green beans
- 50 grams finely chopped potatoes
- 30 grams finely chopped onion
- 2 tablespoons chopped fresh coriander
- 1 green chili, finely chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon lemon juice
- 1 teaspoon oil
- 30 grams whole wheat flour
- 1-2 tablespoons water (for binding)
- 1 teaspoon olive oil
Procedure:
- Rinse the poha under cold water until it softens. Drain well and set aside.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until translucent. Add the grated carrot, chopped green beans, and boiled potatoes.
- Stir in turmeric powder, red chili powder, garam masala, and salt.
- Cook for 3-4 minutes until the vegetables are well combined and cooked through. Add chopped coriander and lemon juice. Mix well and let the mixture cool.
- In a large bowl, combine the softened poha with the cooked vegetable mixture. Mix well to combine. If the mixture is too dry, add a little water to help bind the ingredients. If it’s too wet, add a bit more poha.
- Divide the mixture into small portions and shape them into patties or cutlets.
- Dredge each cutlet in whole wheat flour to coat lightly.
- Heat a non-stick skillet or griddle over medium heat.
- Place the cutlets on the skillet and cook for 2-3 minutes on each side until they are golden brown and crispy.
- Serve the poha veggie cutlets hot with a side of chutney or yogurt dip.
