Popped Amaranth

Popped amaranth is a light, crunchy snack or topping that is quick and easy to prepare. Resembling miniature popcorn, the seeds pop into small, airy pieces when heated, offering a nutty flavor that can be enjoyed on its own or used to add texture to various dishes.
For a Serving Size of Two:
Ingredients:
- 60 grams amaranth seeds
Procedure:
- Heat a deep, heavy-bottomed pan or skillet over medium-high heat. Make sure the pan is dry and hot before adding the amaranth seeds.
- Drop a few amaranth seeds into the pan. If they pop immediately, the pan is hot enough. If they don’t, wait a bit longer for the pan to heat up.
- Add 1 tablespoon of amaranth seeds to the hot pan, then cover with a lid or use a splatter guard. The seeds should start popping quickly.
Shake the pan or stir the seeds constantly to prevent them from burning.
Once the popping slows down (in about 10-15 seconds), transfer the popped amaranth to a bowl.
Continue popping the rest of the amaranth in small batches to avoid burning.
Let the popped amaranth cool down completely before storing it in an airtight container. Use it as a topping for yogurt, smoothies, or salads, or enjoy it as a healthy snack!
