Potato Mushroom Kebabs

Potato Mushroom Kebabs are a delightful vegetarian snack made by combining the earthy flavors of mushrooms with the smooth texture of mashed potatoes. Spiced with Indian masalas and shallow-fried to a crispy exterior, these kebabs are perfect as an appetizer or a light snack. Pair them with chutney or a tangy dip for an extra burst of flavor.

For a Serving Size of Two:

Ingredients:

  • 100 grams boiled and mashed potatoes
  • 80 grams finely chopped mushrooms
  • 30 grams finely chopped onion
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon finely chopped green chilies
  • 2 teaspoons chopped fresh coriander leave
  • 20 grams breadcrumbs
  • 1 tablespoon besan
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon oil for shallow frying

Procedure:

  • In a pan, heat a teaspoon of oil and sauté the onions, ginger-garlic paste, and green chilies until soft. Add the finely chopped mushrooms and cook until the water evaporates and the mushrooms turn slightly golden.
  • In a bowl, combine the mashed potatoes, cooked mushroom mixture, fresh coriander, cumin powder, garam masala, red chili powder, and salt. Add breadcrumbs and chickpea flour to bind the mixture. Mix well and shape into small round or oval kebabs.
  • Heat oil in a pan and shallow fry the kebabs until they are golden brown and crispy on both sides.
  • Serve hot with a side of mint chutney or yogurt dip.

Nutritional Benefits:

  • Potatoes provide a rich source of carbohydrates, which are necessary for energy, and also contain potassium that supports heart health. Mushrooms are a low-calorie source of essential nutrients like B vitamins, selenium, and antioxidants, which boost immune function and promote cellular health.
  • The inclusion of chickpea flour and breadcrumbs adds fiber and helps in binding, while cumin and garam masala provide anti-inflammatory and digestive benefits.
  • The shallow-frying method ensures that the dish remains lower in fat compared to deep-fried alternatives, making it a healthier snack choice. This combination of mushrooms and potatoes delivers a satisfying blend of protein, fiber, and essential vitamins, supporting overall health and satiety.
