These Protein Balls are a delicious, nutrient-dense snack packed with energy and health benefits. Made from a blend of raw almonds, dried dates, sunflower seeds, shredded coconut, and chia seeds, they offer a satisfying crunch and natural sweetness. The addition of cocoa powder and vanilla extract enhances their flavor while keeping them rich in protein and healthy fats. Perfect for a quick energy boost or as a post-workout snack, these balls are easy to make and store well in the refrigerator.
For a Serving Size of Two:
Ingredients:
- 35 grams raw almonds
- 25 grams dried dates (pitted)
- 15 grams sunflower seeds
- 15 grams unsweetened shredded coconut
- 1 tablespoon chia seeds
- 1/4 teaspoon vanilla extract
- 1 teaspoon cocoa powder
Procedure:
- In a food processor, combine the raw almonds and dried dates. Pulse until they form a coarse mixture. The dates will help bind the mixture together.
- Add the sunflower seeds, shredded coconut, chia seeds, and flaxseeds (if using) to the processor. Blend until the mixture is well combined and starts to clump together. Add vanilla extract and cocoa powder if desired.
- Scoop out small portions of the mixture and roll them into balls, about 1-inch in diameter.
- Place the balls on a tray lined with parchment paper. Refrigerate for at least 30 minutes to set.
- Store the protein balls in an airtight container in the refrigerator. They should keep for about a week.
