Puffed Rice (Murmura) Laddoo

Puffed Rice Ladoo is a delightful and healthy Indian sweet that combines the crispy texture of puffed rice with the rich sweetness of jaggery. These ladoos are easy to prepare and make for a perfect snack or dessert option, especially during festive occasions. The addition of nuts and cardamom enhances their flavor, making them a wholesome treat.
For a Serving Size of Two:
Ingredients:
- 60 grams puffed rice
- 2 tablespoons jaggery
- 2 teaspoons ghee
- 1 teaspoon chopped nuts
- 1/4 teaspoon cardamom powder
- A pinch of salt
Procedure:
- Gather all the ingredients. If using whole nuts, chop them into smaller pieces.
- In a small pan, heat the ghee on low flame. Add the grated jaggery and a tablespoon of water. Stir continuously until the jaggery melts completely and forms a syrup. This should take about 2-3 minutes.
- Remove the jaggery syrup from heat and add the puffed rice, chopped nuts, cardamom powder, and a pinch of salt. Mix well to ensure all the puffed rice is coated with the syrup.
- Let the mixture cool slightly, but while it is still warm (be careful of the heat), take small portions and shape them into round ladoos using your palms. If the mixture is too sticky, you can grease your hands with a little ghee.
- Allow the ladoos to cool completely and set. Once cooled, they will firm up. Store them in an airtight container.
