Pumpkin Mushroom Curry

Pumpkin Mushroom Curry is a delicious and hearty dish, perfect for a comforting meal. This curry combines the sweetness of pumpkin, the earthiness of mushrooms, and the richness of lentils and spinach, all enveloped in a fragrant coconut milk-based curry sauce.
For a Serving Size of Two:
Ingredients:
- 100 grams of sliced pumpkin
- 50 grams of finely chopped spinach
- 50 grams of sliced mushrooms
- 100 grams chopped onion
- 100 grams chopped tomatoes
- 45 grams of boiled lentils
- 3 – 4 cloves of garlic
- 1 teaspoon of grated ginger
- 2 finely shredded lime leaves
- 1 tablespoon of tomato paste
- 15 ml coconut milk
- 1 teaspoon curry powder (or a blend of turmeric powder, red chilli powder, coriander powder and garam masala)
- 2 teaspoons sesame oil
Procedure:
- Start by heating a large pan over medium heat and add in the oil.
- Then add in the chopped onion and cook for about 5 minutes.
- Add in the garlic, ginger, lime leaf, curry powder tomato paste and cook for another 5 minutes.
- Then add in the washed and sliced mushrooms along with tomatoes and keep cooking while stirring for another 5 more minutes.
- Mix in the boiled lentils along with some coconut milk and water.
- Cover and cook for about 4-5 minutes for the flavours to infuse.
- The next step is to add in the sliced pumpkin and cover the pan and let it cook for 10-12 minutes.
- Stir in the chopped spinach and further cook for about 2-3 minutes.
- Serve hot with some cooked rice, chopped coriander, and seasonings if required.
