Pumpkin Soup

Pumpkin Soup is a comforting, velvety dish perfect for cozy meals. Made with tender pumpkin, sautéed onions, and garlic, this soup is seasoned with cumin and black pepper, giving it a warm and aromatic flavor. Blended until smooth and served hot with a garnish of fresh coriander, it’s a delightful bowl of goodness that can be enjoyed as a light meal or an appetizer.
For a Serving Size of Two:
Ingredients:
- 300 grams pumpkin
- 200 ml vegetable stock
- 50 grams finely chopped onion
- 2 cloves garlic
- 1/2 teaspoon olive oil
- 1/2 teaspoon cumin powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Fresh coriander for garnish
Procedure:
- Heat olive oil in a pot. Add chopped onions and garlic. Sauté until soft and fragrant.
Add the pumpkin cubes and sauté for 3-4 minutes. - Pour in the vegetable stock, cover, and simmer for about 10-12 minutes until the pumpkin is tender.
- Once the pumpkin is soft, remove the pot from heat and let it cool slightly. Using a hand blender or regular blender, blend the mixture until smooth.
- Return the soup to the pot. Add cumin powder, black pepper, and salt and let it simmer for 2-3 more minutes to combine flavors.
- Garnish with fresh coriander or parsley and serve hot.
