Quick Pizza Omelette

This Quick Pizza Omelette combines the best of pizza flavors with the simplicity of an omelette. Loaded with crumbled feta cheese, diced bell peppers, tomatoes, black olives, and aromatic herbs, it’s a savory and satisfying meal that comes together in minutes. Perfect for a speedy breakfast or a light dinner, it brings a delightful pizza twist to your regular omelette.
For a Serving Size of Two:
Ingredients:
- 2 large eggs
- 1 tablespoon milk or water
- 30 grams crumbled feta cheese
- 50 grams diced bell peppers
- 50 grams diced tomatoes
- 2 tablespoons sliced black olives
- 1 tablespoon chopped onion
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon olive oil
Procedure:
- Dice the bell peppers, tomatoes, onion, and slice the black olives. Set aside.
In a bowl, whisk together the eggs, milk or water, salt, and pepper until well combined. - Heat the olive oil in a non-stick skillet over medium heat. If using cooking spray, spray the pan evenly.
- Add the diced onion to the skillet and sauté for 1-2 minutes until it starts to soften. Add the bell peppers and tomatoes, cooking for an additional 2 minutes until they are tender.
- Pour the beaten eggs over the vegetables in the skillet, tilting the pan to ensure the eggs are evenly distributed.
- Sprinkle the crumbled cheese, black olives, dried oregano, dried basil, and garlic powder evenly over the eggs.
- Reduce the heat to low, cover the skillet, and cook for 3-4 minutes, or until the eggs are fully set and the cheese is melted. You can also fold the omelette in half for a more traditional style.
- Carefully slide the omelette onto a plate and serve warm.
