Quinoa Pancakes

Quinoa Pancakes are a delightful twist on traditional pancakes, combining the earthy flavors of quinoa with the sweetness of ripe banana and the richness of yogurt. The addition of oats flour adds a subtle nuttiness, while cinnamon provides a warm, aromatic touch. These pancakes are perfect for a nutritious breakfast or a healthy snack, offering a balanced mix of complex carbohydrates, protein, and fiber. Whether served with fresh fruits or a dollop of yogurt, they make for a satisfying and wholesome meal.
For a Serving Size of Two:
Ingredients:
- 60 grams cooked quinoa
- 40 grams oats flour
- 1 small ripe banana
- 60 grams plain yogurt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract (optional)
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- A pinch of salt
- 2 teaspoons oil
Procedure:
- Mix 1 tablespoon ground flaxseed with 3 tablespoons of water. Let it sit for 5-10 minutes until it thickens. In a blender or food processor, combine the cooked quinoa, oats flour, banana, yogurt, cinnamon, vanilla extract, and the flax egg. Blend until smooth.
- Heat a non-stick pan over medium heat and add a little oil. Pour small amounts of the batter onto the pan, forming pancakes.
- Cook each side for about 2-3 minutes or until golden brown.
- Serve warm with fresh fruits or a dollop of yogurt.
