Ragi Oats and Wheat Thepla

Ragi Oats and Wheat Thepla is a nutritious and flavorful Indian dish that combines the goodness of ragi (finger millet), oats, and whole wheat flour. This thepla is enriched with yogurt, fresh coriander, ginger, and green chilies, making it a wholesome and tasty option for breakfast, lunch, or dinner. Lightly cooked on a tawa with ghee, these theplas are soft, slightly crisp, and perfect when served with yogurt, pickle, or chutney.

For a Serving Size of Two:

Ingredients:

  • 40 grams ragi flour
  • 40 grams oats flour
  • 40 grams whole wheat flour
  • 30 grams yogurt
  • 10 grams chopped coriander leaves
  • 5 grams grated ginger
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon ajwain
  • 1/4 teaspoon salt
  • 1 teaspoon oil (for dough)
  • Water as needed (for kneading the dough)
  • 1 teaspoon ghee

Procedure:

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add sliced mushrooms and sauté until they release their moisture and become tender.
  3. Add fresh spinach leaves to the skillet and cook until wilted.
  4. Whisk together eggs, salt, pepper, and a splash of milk in a separate bowl.
  5. Pour the egg mixture over the vegetables in the skillet.
  6. Sprinkle sesame seeds on the top.
  7. Cook the omelette, gently lifting the edges with a spatula and tilting the skillet to let the uncooked egg flow underneath.
  8. Once the omelette is mainly set, fold it in half and cook for another minute.
  9. Slide the omelette onto a plate and serve. Repeat the procedure to make the second serving!
