Rainbow Roll Ups are vibrant, colorful wraps filled with fresh vegetables like carrots, cucumber, bell peppers, and avocado, all rolled in a soft whole wheat tortilla spread with creamy guacamole. These nutritious wraps make for a visually appealing and healthy snack, perfect for a light meal or as a refreshing party appetizer.
For a Serving Size of Two:
Ingredients:
- 50 grams julienned carrot
- 50 grams julienned cucumber
- 50 grams julienned red bell pepper
- 50 grams julienned yellow bell pepper
- 4-5 lettuce leaves
- 80 grams sliced avocado
- 4 whole wheat tortillas/ multigrain rotis
- 30 grams guacamole
- 1 teaspoon lemon juice
- A pinch of salt and pepper
- Mint for garnish
Procedure:
- Lay a whole wheat tortilla flat on a clean surface.
- Spread a thin layer of guacamole on the tortilla.
- Arrange the julienned veggies, avocado slices, and lettuce in a rainbow pattern across the middle of the tortilla. Sprinkle a pinch of salt, pepper, and fresh herbs for extra flavor.
- Roll the tortilla tightly around the vegetables. You can slice it in half to create smaller pieces.
- Cut the roll-ups into bite-sized pieces or serve whole as a snack. Secure with toothpicks if needed.
