Rajgira Banana Pancakes

Rajgira Banana Pancakes are a delightful and nutritious breakfast option that combines the ancient grain amaranth (rajgira) with the natural sweetness of ripe bananas. These pancakes are light, fluffy, and packed with flavor, thanks to the addition of cinnamon and vanilla extract. Perfectly balanced in taste and texture, these pancakes are a wholesome start to your day, especially when topped with fresh fruits and nuts.
For a Serving Size of Two:
Ingredients:
- 60 grams rajgira (amaranth) flour
- 1 ripe big banana, mashed
- 1 egg (optional for binding, can be omitted for a vegan version)
- 50 ml milk
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon vanilla extract
- 1 teaspoon oil
- A pinch of salt
Procedure:
- In a mixing bowl, mash the ripe banana until smooth.
- Add the rajgira flour, egg (if using), milk, cinnamon powder, vanilla extract, and a pinch of salt.
- Mix well to form a smooth batter. If the batter is too thick, add a little more milk to achieve the desired consistency.
- Heat a non-stick pan over medium heat and lightly grease it with oil.
- Pour a small ladleful of batter onto the pan to form a pancake. Cook until bubbles start to form on the surface and the edges begin to set, about 2-3 minutes.
- Flip the pancake and cook for another 2-3 minutes, until golden brown on both sides.
- Repeat the process with the remaining batter. Serve the pancakes warm, topped with fresh fruits and nuts.
