Rajgira Sheera

Rajgira Sheera is a delicious and wholesome sweet dish made from amaranth flour, ideal for fasting or as a nutritious dessert. This delightful treat combines the nutty flavor of rajgira flour with the sweetness of jaggery, creating a satisfying and aromatic pudding. It’s rich in essential nutrients, making it a wonderful choice for a quick energy boost.
For a Serving Size of Two:
Ingredients:
- 60 grams rajgira flour
- 1 tablespoon ghee
- 100 grams water or milk
- 1 tablespoon jaggery
- 1/4 teaspoon cardamom powder
- 1 tablespoon chopped nuts
- A pinch of salt
Procedure:
- In a pan, heat the ghee over medium heat until melted. Add the rajgira flour and roast it for about 3-4 minutes, stirring continuously until it turns a light golden color and releases a nutty aroma. Be careful not to burn it.
- Add the grated jaggery to the pan and mix well, allowing it to melt. Stir until it is completely dissolved.
- Gradually pour in the water or milk, stirring continuously to avoid lumps. Cook for another 2-3 minutes, allowing the mixture to thicken to your desired consistency.
- Add the cardamom powder and a pinch of salt, mixing well to incorporate the flavors.
- Once the sheera is cooked to your liking, remove it from the heat. Serve warm, garnished with chopped nuts.
