Raspberry Chia Pudding

This Raspberry Chia Pudding is a delightful and nutritious dessert that combines the tangy flavor of raspberries with the creamy texture of chia seeds. Easy to prepare and perfect for meal prep, this pudding makes a satisfying meal option. Packed with antioxidants and healthy fats, it’s both delicious and nourishing.

For a Serving Size of Two:

Ingredients:

  • 120 grams fresh or frozen raspberries
  • 60 grams milk
  • 30 grams chia seeds
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Procedure:

  • In a blender, combine the raspberries, almond milk, honey, vanilla extract, and salt. Blend until smooth.
  • In a mixing bowl, add the chia seeds. Pour the raspberry mixture over the chia seeds and stir well to combine.
  •  Cover the bowl with plastic wrap or transfer the mixture to individual jars. Refrigerate for at least 2-4 hours, or preferably overnight, until the pudding thickens.
  • Once set, give the pudding a good stir. Serve chilled, topped with extra raspberries and a sprinkle of chia seeds if desired.
