Red-Pepper Walnut Dip

Red-Pepper Walnut Dip is a delicious and creamy spread that combines the sweetness of roasted red bell peppers with the earthy richness of walnuts. This vibrant dip is perfect for snacking, entertaining, or as a flavorful addition to your meals.
For a Serving Size of Two:
Ingredients:
- 100 grams roasted red bell peppers
- 60 grams toasted walnuts
- 1 minced garlic clove
- 15 grams tahini (or sesame seeds)
- 2 teaspoons olive oil
- Juice of 1 lemon
- Salt to taste
- Fresh herbs (like parsley or cilantro) for garnish (optional)
Procedure:
- In a food processor, combine the roasted red peppers, toasted walnuts, minced garlic, tahini, olive oil, and lemon juice. Blend until smooth and creamy.
- If the dip is too thick, add a tablespoon of water at a time until you reach the desired consistency.
- Add salt as needed and blend again. Taste and adjust the seasoning, adding more lemon juice for tanginess if desired.
- Transfer the dip to a serving bowl and drizzle with a little extra olive oil. Garnish with fresh herbs if using. Serve with whole-grain crackers, pita bread, or vegetable sticks.
