Rice Panki

Rice Panki is a traditional Indian steamed dish made from rice flour, flavored with spices and fresh herbs. This healthy and gluten-free snack or breakfast option is light, fluffy, and perfect for enjoying with spicy chutneys or yogurt.
For a Serving Size of Two:
Ingredients:
- 1 cup rice flour (about 120 grams)
- 1/4 cup yogurt (about 60 grams)
- 1/2 cup water (adjust as needed)
- 1/2 teaspoon cumin seeds
- 1-2 green chilies, finely chopped
- 1/4 cup finely chopped coriander leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- Banana leaves or parchment paper for steaming
- Oil for greasing
Procedure:
- In a mixing bowl, combine rice flour, yogurt, water, cumin seeds, green chilies, coriander leaves, turmeric powder, and salt. Mix until you have a smooth batter; adjust the water to achieve a pourable consistency.
- Cut banana leaves or parchment paper into squares, about 6×6 inches, and lightly grease them with oil.
- Pour a ladleful of the batter onto the center of each greased leaf or paper, spreading it out evenly.
- Fold the banana leaf or parchment paper to create a pocket or stack the leaves in a steamer.
- Steam the panki for about 15-20 minutes or until cooked through and firm to touch.
- Carefully unwrap the panki and serve hot, optionally garnished with fresh coriander or accompanied by chutney.
