Roasted Cauliflower Sesame Salad

The Roasted Cauliflower Sesame Salad features tender, caramelized cauliflower and vegetables paired with roasted chickpeas. Seasoned with ground cumin and paprika, the salad is enhanced with a zesty lemon dressing and garnished with toasted sesame seeds for added crunch and flavor.

For a Serving Size of Two:

Ingredients: 

  • 100 grams cauliflower, cut into florets
  • 60 grams cubed carrots
  • 40 gram cubed onions 
  • 40 grams boiled chickpeas
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon grams paprika 
  • Salt and black pepper to taste
  • 2 teaspoons lemon juice
  • 2 teaspoons lightly toasted sesame seeds

Procedure: 

  • Preheat the oven to 400ºF (200ºC).
  • Chop the cauliflower into small florets.
  • Cut the onions and carrots into cubes.
  • Place the cauliflower, onions, carrots, and boiled chickpeas on a large baking sheet.
  • Drizzle the olive oil over the vegetables and chickpeas.
  • Season with ground cumin, paprika, salt, and black pepper.
  • Toss all the ingredients until well coated.
  • Roast in the preheated oven for 20 minutes, stir, then roast for an additional 10-15 minutes, or until the cauliflower and other vegetables are tender and browned on the edges.
  • In a small bowl, mix together the lemon juice, paprika, and a pinch of salt. Refrigerate the dressing until ready to serve.
  • Once the veggies and chickpeas are roasted, transfer them to a mixing bowl.
  • Add the dressing and toss well to combine. Sprinkle lightly toasted sesame seeds on top and serve warm.
