This Barley Mango Salad is a vibrant, refreshing blend of textures and flavors. The chewy barley adds a satisfying base, complemented by the juicy sweetness of mango and the fresh crunch of cucumber and bell pepper. Mint and coriander bring in a burst of herbal freshness, and a light lemon dressing ties everything together, making this salad both zesty and wholesome.

Ingredients:
- 80 grams cooked barley
- 150 grams diced ripe mango
- 50 grams diced cucumber
- 30 grams diced red bell pepper
- 1 tablespoon chopped mint leaves
- 1 tablespoon chopped coriander leaves
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper powder
- Salt to taste
Procedure:
- In a large mixing bowl, add the cooked barley, diced mango, cucumber, and red bell pepper.
- Sprinkle the chopped mint and coriander leaves over the mixture.
- Drizzle lemon juice over the salad, then add black pepper and salt. Toss well to combine.
