Macaroni Salad

This Macaroni Salad is a classic, creamy dish that combines the delightful flavors of fresh vegetables with the comforting texture of macaroni pasta. It’s a perfect side dish for picnics, barbecues, or any gathering. The colorful mix of cherry tomatoes, cucumber, and bell pepper adds a refreshing crunch, while the creamy dressing brings it all together for a satisfying bite.
For a Serving Size of Two:
Ingredients:
- 60 grams elbow macaroni
- 50 grams halved cherry tomatoes
- 50 grams diced cucumber
- 30 grams diced bell pepper (any color)
- 30 grams finely chopped red onion
- 2 tablespoons Greek yogurt
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
- Fresh parsley or dill, chopped, for garnish
Procedure:
- In a pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a small bowl, whisk together Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooked macaroni, cherry tomatoes, cucumber, bell pepper, and red onion.
- Pour the dressing over the macaroni mixture and gently toss until all ingredients are well coated.
- Garnish with fresh parsley or dill and serve chilled or at room temperature.
