Macaroni Salad

This Macaroni Salad is a classic, creamy dish that combines the delightful flavors of fresh vegetables with the comforting texture of macaroni pasta. It’s a perfect side dish for picnics, barbecues, or any gathering. The colorful mix of cherry tomatoes, cucumber, and bell pepper adds a refreshing crunch, while the creamy dressing brings it all together for a satisfying bite.

For a Serving Size of Two:

Ingredients:

  • 60 grams elbow macaroni
  • 50 grams halved cherry tomatoes
  • 50 grams diced cucumber
  • 30 grams diced bell pepper (any color)
  • 30 grams finely chopped red onion
  • 2 tablespoons Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • Fresh parsley or dill, chopped, for garnish

Procedure:

  • In a pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  • In a small bowl, whisk together Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  • In a large mixing bowl, combine the cooked macaroni, cherry tomatoes, cucumber, bell pepper, and red onion.
  • Pour the dressing over the macaroni mixture and gently toss until all ingredients are well coated.
  • Garnish with fresh parsley or dill and serve chilled or at room temperature.
