Rainbow Salad

The Rainbow Salad is a vibrant and nutrient-packed dish featuring a colourful mix of fresh vegetables and chickpeas. With carrots, beetroot, purple cabbage, cucumber, tomatoes, and onions, it offers a rich variety of textures and flavours. The salad is tossed with a zesty lemon juice dressing and seasoned with salt, pepper, and chaat masala for an extra kick.
For a Serving Size of Two:
Ingredients:
- 60 grams chickpeas, soaked overnight and boiled till cooked
- 60 grams chopped carrot
- 60 grams chopped beetroot
- 60 grams shredded purple cabbage
- 60 grams chopped cucumber
- 50 grams diced tomatoes
- 50 grams diced onions
- 1 tablespoon lemon juice
- Salt and pepper to taste
- ½ teaspoon chaat masala
Procedure:
- In a large mixing bowl, add the chopped carrot, beetroot, purple cabbage, cucumber, chickpeas, tomato, and onion.
- Pour the lemon juice over the salad ingredients. Add salt to taste. Sprinkle pepper and chaat masala over.
- Toss all the ingredients together until well combined and evenly coated with lemon juice, salt, and spices.
- Serve the Rainbow Salad immediately!
