This Shrimp & Avocado Salad is a refreshing, protein-packed dish that brings together the buttery texture of avocado, the juicy sweetness of tomatoes, and the mild crunch of cucumber. Combined with perfectly cooked shrimp and a zesty lime dressing, it’s a bright and flavorful salad that’s light yet satisfying. For a Serving Size of Two:
Ingredients:
- 150 grams cooked shrimp
- 1 medium diced avocado (about 120 grams)
- 80 grams diced cucumber
- 50 grams halved cherry tomatoes
- 30 grams thinly sliced red onion
- 30 grams mixed greens or arugula
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- Salt and black pepper, to taste
- Fresh cilantro or parsley, for garnish
Procedure:
