Sprouted Moong Salad with Pomegranate

Sprouted Moong Salad with Pomegranate is a vibrant and nutritious dish, perfect for a refreshing snack or a light meal. This salad combines protein-packed sprouted moong beans with the sweetness of pomegranate and the crunch of peanuts, along with crisp cucumber, juicy tomatoes, and aromatic cilantro. Seasoned with roasted cumin powder, black salt, and fresh lemon juice, it offers a burst of flavors and textures in every bite.
For a Serving Size of Two:
Ingredients:
- 60 grams sprouted moong beans (green gram)
- 1.5 tablespoons chopped peanuts
- 50 grams pomegranate
- 50 grams diced cucumber
- 50 grams finely chopped onion
- 59 grams finely chopped tomatoes
- 2 green chillies, finely chopped
- 2 tablespoons chopped cilantro (coriander leaves)
- 2 tablespoons lemon juice
- 1 teaspoon roasted cumin powder
- ½ teaspoon black salt (kala namak)
- Salt and pepper to taste
Procedure:
- Rinse moong beans and sprout them by soaking overnight, then draining and rinsing daily until small sprouts form in 2-3 days.
- In a mixing bowl, combine sprouted moong beans, chopped peanuts, pomegranate, diced cucumber, chopped onion, chopped tomatoes, green chillies, and chopped cilantro.
- Sprinkle some roasted cumin powder, black salt, and regular salt and pepper over the salad.
- Then, squeeze the juice of one lemon over the salad for a zesty kick.
- Gently toss all the ingredients together until well-mixed.
- Refrigerate the salad for about 30 minutes before serving to allow the flavours to melt. You can also eat it fresh as soon as prepared.
