Ingredients:
- 1 cup cooked quinoa
- 1/2 cup cooked millet
- 1/2 cup cooked amaranth
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the cooked quinoa, millet, and amaranth.
- Add the cucumber, cherry tomatoes, red onion, and cilantro to the bowl.
- In a separate small bowl, whisk together the lemon juice, olive oil, cumin powder, coriander powder, turmeric powder, salt, and pepper.
- Pour the dressing over the grain mixture and toss well to combine.
- Adjust the seasoning if needed.
