This Thai Chicken Peanut Salad is a refreshing, colorful dish that brings together crisp vegetables, tender chicken, and a creamy peanut dressing with hints of citrus and spice. For a Serving Size of Two:
Ingredients:
- 150 grams cooked chicken breast, sliced or shredded
- 100 grams thinly sliced red cabbage
- 50 grams julienned carrots
- 50 grams julienned cucumber
- 30 grams thinly sliced red bell pepper
- 20 grams chopped fresh cilantro
- 15 grams chopped mint leaves
- 10 grams chopped green onions
- 20 grams roughly chopped roasted peanuts
Dressing:
- 1 tablespoon peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 small red chili, finely chopped
- Salt and pepper, to taste
Procedure:
- In a large bowl, combine the shredded chicken, red cabbage, carrots, cucumber, red bell pepper, cilantro, mint leaves, and green onions.
- In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and chili. Adjust salt and pepper to taste.
- Pour the dressing over the salad ingredients. Gently toss to coat everything evenly. Sprinkle the chopped roasted peanuts on top for crunch. Serve fresh.
