For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 1 ripe banana (about 90 grams, mashed)
- 2 teaspoons sesame seeds (white or black)
- 100 ml milk (or any plant-based milk)
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon powder
- 1/2 teaspoon vanilla extract
- 1 teaspoon coconut oil
- A pinch of salt
Procedure:
- In a bowl, mash the ripe banana. Add almond milk and vanilla extract to it, and mix well.
- In another bowl, mix the whole wheat flour, sesame seeds, baking powder, cinnamon powder, and a pinch of salt.
- Gradually pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. Avoid over-mixing to maintain fluffiness.
- Heat a non-stick pan over medium heat and lightly grease it with coconut oil. Pour a ladle of batter onto the pan and spread it gently into a round shape. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Stack the pancakes and top with additional sesame seeds, banana slices, or any preferred toppings like peanut butter or fruit.
