Singhara Dhokla

Singhara Dhokla is a savory, steamed Indian snack made with singhara flour, yogurt, and a blend of aromatic spices. This gluten-free dhokla features a smooth batter flavored with ginger-green chili paste, turmeric, and chili powder. It’s garnished with a tempering of mustard seeds, cumin seeds, and curry leaves, then finished with fresh coriander leaves. Steamed to perfection, it’s light, fluffy, and perfect as a healthy snack or appetizer.
For a Serving Size of Two:
Ingredients:
- 60 grams singhara flour
- 30 grams yogurt
- 50 ml water
- 1 tablespoon ginger-green chili paste
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- 1 tablespoon lemon juice
- 1 tablespoon chopped coriander leaves
- Salt to taste
- 1 teaspoon oil
- A few curry leaves
Procedure:
- In a mixing bowl, combine the singhara flour, yogurt, water, ginger-green chili paste, turmeric powder, chili powder, lemon juice, and salt. Mix well to form a smooth batter.
- Grease a steaming plate or any heatproof dish with oil. Set aside.
- Heat oil in a small pan. Add mustard seeds, cumin seeds, and curry leaves. Sauté until they splutter. Remove from heat and set aside.
- Pour the batter into the greased steaming plate. Place it in a preheated steamer. Steam on medium heat for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Once the dhokla is cooked, remove it from the steamer. Pour the prepared tempering over the dhokla if desired.
- Garnish with chopped coriander leaves. Cut into pieces and serve warm with a bowl of green chutney.
