Sizzling Vegetable Platter

Sizzling Vegetable Platter is a vibrant, colorful medley of fresh vegetables that are lightly seasoned and cooked to perfection in a hot skillet. The dish offers a delightful mix of crisp textures and bold flavors, perfect as a side dish or a light, healthy main.

For a Serving Size of Two:

Ingredients:

  • 100 grams zucchini, sliced
  • 100 grams bell peppers (mixed colors), sliced
  • 100 grams carrots, julienned
  • 50 grams broccoli florets
  • 50 grams mushrooms, sliced
  • 1 small onion, sliced (50 grams)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp soy sauce (optional)
  • 1/2 tsp cumin powder
  • 1/2 tsp paprika or chili flakes
  • Salt and pepper to taste

Procedure:

  1. Heat the Pan: Heat a cast iron skillet or grill pan over medium-high heat until it’s sizzling hot.
  2. Prepare the Vegetables: In a large bowl, toss the sliced zucchini, bell peppers, carrots, broccoli, mushrooms, and onion with olive oil, cumin powder, paprika, salt, and pepper. Add soy sauce if desired.
  3. Sauté the Vegetables: Add the seasoned vegetables to the hot skillet, allowing them to sizzle as they cook. Stir occasionally, cooking for about 5-7 minutes until the vegetables are slightly charred but still crisp.
  4. Finish with Lemon: Drizzle lemon juice over the vegetables and toss well to enhance the flavors.
  5. Serve: Remove from heat and garnish with fresh cilantro or parsley. Serve immediately on the hot skillet for a sizzling effect.
