Smoky black bean vegan soup

Vegetables are the true star of the recipe, making it a perfect option for your vegan friends. Healthy black bean soup recipe with earthy comforting tones from cumin, carrots, celery and onions is great in taste.

Ingredients:
- 20 grams carrots, chopped
- 15 grams black beans
- 10 grams fresh boiled corn
- 20 grams onion, finely chopped
- 20 grams tomato
- 1-2 stalks celery, slices
- 1-2 cloves garlic, crushed
- ½ teaspoon ground cumin
- 1 cup vegetable stock
- 1 teaspoon oil
- Salt to taste
- 1-2 springs Coriander, for serving

Method:
- In a frying pan, heat oil on medium-high flame. Add carrots, celery and onions. Cook until the colour changes to brown, while stirring occasionally.
- Add vegetable broth, tomato, garlic and cumin and bring it to boil.
- Add black beans and corn and cook until tender.
- Once done, garnish it with coriander and serve hot.
