Smoky Vegetables is a vibrant and flavorful side dish featuring an assortment of grilled vegetables like bell peppers, zucchini, broccoli, and cherry tomatoes. Tossed in a blend of smoked paprika, cumin, and garlic powder, the vegetables are grilled to perfection, creating a slightly charred and smoky flavor. Finished with a hint of lemon juice, this dish is both refreshing and aromatic, making it a perfect accompaniment to any meal or a healthy snack on its own.
For a Serving Size of Two:
Ingredients:
- 150 grams bell peppers (mixed colors), cut into strips
- 100 grams zucchini, sliced
- 100 grams broccoli florets
- 50 grams cherry tomatoes
- 1 small red onion, cut into wedges
- 1 teaspoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin powder
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 teaspoon lemon juice
Procedure:
- In a large bowl, combine bell peppers, zucchini, broccoli, cherry tomatoes, and red onion.
- Drizzle with olive oil and toss to coat.
Add smoked paprika, cumin powder, garlic powder, salt, and black pepper to the vegetables. - Toss well to ensure even coating of spices.
- Heat a grill pan or regular pan over medium-high heat.
- Add the vegetables to the pan in a single layer.
- Cook for 5-7 minutes, turning occasionally until vegetables are tender and slightly charred.
- Remove the vegetables from the pan and drizzle with lemon juice.
- Serve hot as a side dish or enjoy them on their own.
