These Baked Pumpkin Slices with Thyme are a delicious and healthy side dish featuring tender pumpkin wedges seasoned with aromatic herbs and spices. The addition of feta cheese adds a creamy, tangy touch to each slice, making it a flavorful treat.
For a Serving Size of Two:
Ingredients:
- 300 grams pumpkin, peeled and sliced into 1/4-inch thick wedges
- 2 teaspoons olive oil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1 tablespoon Feta cheese
Procedure:
- Preheat your oven to 200°C (400°F). Peel the pumpkin and cut it into 1/4-inch thick wedges.
- In a large bowl, toss the pumpkin slices with olive oil, dried thyme, garlic powder, paprika, salt, and black pepper until evenly coated.
- Place the seasoned pumpkin slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the pumpkin is tender and edges are golden brown.
- Sprinkle the feta cheese over the pumpkin slices during the last 5 minutes of baking.
