Baked Shakarkandi Chaat is a delightful fusion of flavors and textures, combining the natural sweetness of baked sweet potatoes with tangy curd, fresh herbs, and a hint of spice. For a Serving Size of Two:

Ingredients:

  • 300 grams peeled and diced shakarkandi (sweet potato)
  • 1 teaspoon olive oil
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 50 grams plain curd 
  • 1 tablespoon lemon juice
  • 2 tablespoons finely chopped fresh coriander leaves
  • 2 tablespoons finely chopped onions
  • 2 tablespoons pomegranate seeds
  • 1 tablespoon chopped fresh mint leaves

Procedure:

  1. Preheat your oven to 200°C (400°F).
  2. Toss the diced shakarkandi in olive oil, chaat masala, roasted cumin powder, red chili powder, and salt.
  3. Spread the seasoned shakarkandi on a baking sheet in a single layer. Bake for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy on the edges. Shake the pan halfway through to ensure even baking.
  4. In a small bowl, whisk the plain curd with lemon juice and a pinch of salt. Adjust the consistency with a little water if needed.
  5. Once the shakarkandi is baked and slightly cooled, transfer it to a serving bowl.
  6. Drizzle the curd mixture over the warm shakarkandi.
  7. Top with chopped onions, pomegranate seeds, and fresh mint leaves.
  8. Garnish with extra chopped coriander leaves.
