Chicken Satay Stir Fry

Chicken Satay Stir Fry is a vibrant and flavorful dish that combines marinated chicken with a colorful mix of vegetables, all tossed in a creamy homemade peanut sauce. The chicken is marinated with aromatic spices like turmeric and cumin, then stir-fried to perfection. The vegetables add a crisp texture, while the peanut butter-based satay sauce gives the dish a rich, nutty flavor balanced with a hint of lime. Garnished with fresh coriander, this dish is a delicious and wholesome meal.
For a Serving Size of Two:
Ingredients:
- 200 grams chicken breast, thinly sliced
- 50 grams thinly sliced bell peppers
- 50 grams thinly sliced yellow bell pepper
- 50 grams thinly sliced zucchini
- 40 grams julienned carrot
- 2 cloves minced garlic
- 1 teaspoon minced ginger
- 2 tablespoons peanut butter (homemade)
- 1 tablespoon lime juice
- 1 tablespoon coconut milk
- 2 teaspoons coconut oil
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon red chili flakes
- Salt to taste
- Fresh coriander leaves
Procedure:
- In a bowl, mix turmeric powder, cumin powder, minced garlic, minced ginger, lime juice, and a pinch of salt. Add the sliced chicken to the marinade and toss to coat. Let it marinate for at least 15 minutes.
- In a small bowl, mix peanut butter with a tablespoon of water and coconut milk until smooth. Adjust the consistency by adding more water if needed. Set aside.
- Heat coconut oil in a large skillet or wok over medium-high heat. Add the marinated chicken slices and stir-fry for 5-6 minutes until the chicken is cooked through and slightly golden. Remove the chicken from the pan and set aside.
- In the same pan, add the sliced bell peppers, zucchini, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the pan with the vegetables. Pour the prepared satay sauce over the chicken and vegetables, and toss everything together until well-coated and heated through.
- Adjust seasoning with salt and red chili flakes to taste. Garnish with chopped fresh coriander.
