Chickpea & Raw Mango Salad

Chickpea & Raw Mango Salad is a vibrant and refreshing dish that perfectly balances tangy, spicy, and earthy flavors. The tender boiled chickpeas are combined with the zesty bite of raw mango, the crunch of cucumber, and the freshness of tomatoes and red onions. Garnished with fresh coriander leaves, this salad is a delightful blend of textures and tastes, making it an ideal light meal or side dish.
For a Serving Size of Two:
Ingredients:
- 60 grams boiled chickpeas
- 50 grams peeled and diced raw mango
- 30 grams diced cucumber
- 20 grams finely chopped red onion
- 20 grams diced tomato
- 1 tablespoon chopped fresh coriander leaves
- 1 green chili, finely chopped
- 1 teaspoon roasted cumin powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon black salt
- 1 tablespoon lemon juice
- Salt to taste
Procedure:
- In a large mixing bowl, combine the boiled chickpeas, diced raw mango, cucumber, red onion, tomato, and green chili.
- Add the roasted cumin powder, red chili powder, black salt, and regular salt to the mixture.
- Drizzle lemon juice over the salad and mix everything well to ensure that the spices and lemon juice coat the chickpeas and vegetables evenly.
- Garnish with fresh coriander leaves.
