Kale and Chickpea Stir-Fry

This Kale and Chickpea Stir Fry is a vibrant, nutrient-packed dish that brings together the earthy flavors of kale with hearty chickpeas and a medley of crisp vegetables. Tossed in a blend of ground cumin and smoked paprika, and finished with a splash of lemon juice, this stir fry offers a delightful balance of savory and tangy flavors. For a Serving Size of Two:

Ingredients:

  • 100 grams chopped  kale
  • 60 grams cooked chickpeas
  • 50 grams sliced bell pepper
  • 50 grams sliced carrot
  • 50 grams sliced zucchini
  • 50 grams chopped onion
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Procedure: 

  • In a large skillet or wok, heat olive oil over medium heat.
  • Add the chopped onion and cook for 3-4 minutes until softened. Add the sliced bell pepper, carrot, and zucchini. Cook for another 5-6 minutes until the vegetables are tender but still crisp.
  • Stir in the chopped kale and cook until it is wilted, about 3-4 minutes.
  • Add the cooked chickpeas to the skillet. Stir in ground cumin, smoked paprika, lemon juice, salt, and pepper.
  • Cook for an additional 2-3 minutes, allowing the flavors to combine and the chickpeas to heat through.
  • Serve the stir-fry warm as a main dish or alongside rice, quinoa, or a grain of your choice.
