Kale and Chickpea Stir-Fry

This Kale and Chickpea Stir Fry is a vibrant, nutrient-packed dish that brings together the earthy flavors of kale with hearty chickpeas and a medley of crisp vegetables. For a Serving Size of Two:
Ingredients:
- 100 grams chopped kale
- 60 grams cooked chickpeas
- 50 grams sliced bell pepper
- 50 grams sliced carrot
- 50 grams sliced zucchini
- 50 grams chopped onion
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 tablespoon lemon juice
- Salt and pepper to taste
Procedure:
- In a large skillet or wok, heat olive oil over medium heat.
- Add the chopped onion and cook for 3-4 minutes until softened. Add the sliced bell pepper, carrot, and zucchini. Cook for another 5-6 minutes until the vegetables are tender but still crisp.
- Stir in the chopped kale and cook until it is wilted, about 3-4 minutes.
- Add the cooked chickpeas to the skillet. Stir in ground cumin, smoked paprika, lemon juice, salt, and pepper.
- Cook for an additional 2-3 minutes, allowing the flavors to combine and the chickpeas to heat through.
- Serve the stir-fry warm as a main dish or alongside rice, quinoa, or a grain of your choice.
