Fenugreek Soup

This Fenugreek Soup is a comforting, nutritious dish with a unique, slightly bitter taste from fresh fenugreek leaves, balanced by the sweetness of tomatoes and warmth of spices. Light yet flavorful, this soup makes a delicious appetizer or a wholesome addition to a meal. The cumin and ginger add an aromatic depth, complementing the earthy flavor of fenugreek.

For a Serving Size of Two:

Ingredients:

  • 100 grams chopped fenugreek leaves
  • 100 grams diced tomatoes
  • 50 grams diced onions
  • 1 teaspoon olive oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt, or to taste
  • 500 ml vegetable broth or water
  • 1 tablespoon chopped coriander leaves

Procedure:

  • In a pot, heat olive oil over medium heat.
  • Add cumin seeds and let them splutter. Then add grated ginger and diced onions, and sauté until the onions turn translucent.
  • Add diced tomatoes and turmeric powder, and cook until the tomatoes become soft and start to break down.
  • Add the chopped fenugreek leaves and sauté for 2-3 minutes until the leaves wilt slightly.
  • Pour in the vegetable broth (or water), add salt and black pepper, and stir well.
  • Let the soup simmer for about 10 minutes, allowing the flavors to meld together.
  • Remove from heat, garnish with chopped coriander leaves, and serve warm.

Nutritional Benefits:

  • Fenugreek leaves are rich in iron, calcium, and dietary fiber, making this soup excellent for supporting digestive health and maintaining stable blood sugar levels. Fenugreek is known for its ability to help regulate blood glucose and cholesterol levels, benefiting heart health. It is also packed with antioxidants, which may help in reducing inflammation and improving immunity.
  • The tomatoes provide vitamin C and lycopene, beneficial for skin health and immune function. Ginger and cumin are digestive aids that reduce inflammation and enhance nutrient absorption. This soup is particularly beneficial in winter months due to its warming and nutrient-dense properties, supporting overall wellness.
