Fenugreek Soup

This Fenugreek Soup is a comforting, nutritious dish with a unique, slightly bitter taste from fresh fenugreek leaves, balanced by the sweetness of tomatoes and warmth of spices. Light yet flavorful, this soup makes a delicious appetizer or a wholesome addition to a meal. The cumin and ginger add an aromatic depth, complementing the earthy flavor of fenugreek.
For a Serving Size of Two:
Ingredients:
- 100 grams chopped fenugreek leaves
- 100 grams diced tomatoes
- 50 grams diced onions
- 1 teaspoon olive oil
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon grated ginger
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon black pepper, freshly ground
- 1/2 teaspoon salt, or to taste
- 500 ml vegetable broth or water
- 1 tablespoon chopped coriander leaves
Procedure:
- In a pot, heat olive oil over medium heat.
- Add cumin seeds and let them splutter. Then add grated ginger and diced onions, and sauté until the onions turn translucent.
- Add diced tomatoes and turmeric powder, and cook until the tomatoes become soft and start to break down.
- Add the chopped fenugreek leaves and sauté for 2-3 minutes until the leaves wilt slightly.
- Pour in the vegetable broth (or water), add salt and black pepper, and stir well.
- Let the soup simmer for about 10 minutes, allowing the flavors to meld together.
- Remove from heat, garnish with chopped coriander leaves, and serve warm.
