Swiss Chard and Lentil Soup

Swiss Chard and Lentil Soup is a hearty and nutritious dish that combines the earthy flavors of lentils with the vibrant taste of Swiss chard. For a Serving Size of Two:

Ingredients:

  • 100 grams chopped Swiss chard
  • 100 grams diced carrots
  • 100 grams diced potato
  • 50 grams chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 70 grams dried lentils (green or brown)
  • 750 ml vegetable broth (or water)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped

Procedure:

  • Rinse and drain the lentils, chop the Swiss chard, dice the carrots and potatoes, and chop the onion. Mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic, ground cumin, and smoked paprika, cooking for another minute until fragrant.
  • Add the diced carrots and potatoes to the pot, stirring to combine. Cook for about 5-7 minutes, until the vegetables begin to soften.
  • Add the rinsed lentils and pour in the vegetable broth (or water). Bring the mixture to a boil.
  • Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the lentils and vegetables are tender.
  • Stir in the chopped Swiss chard and cook for an additional 5 minutes until the greens are wilted.
  • Stir in the fresh lemon juice, then taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley before serving.
