Sous Vide Corn on The Cob with Lemon and Jaggery Syrup

Sweet corn is a healthy and flavor-some snacking option and is loved by almost everyone, be it boiled, roasted, or grilled or in this recipe as raw and dressed corn cobs. This recipe with sous vide cooking technique, a French word for “under vacuum” and is referred to as the vacuum-packing process of food in a bag. This recipe is made with the twist of tangy lemon and sweet jaggery syrup along with some spices and is a comparatively tasty and healthy snack that you can make this winter and relish it with family and friends.

Sweet corn has dietary fiber and is rich in Vitamin C, phosphorus and magnesium. It is a rich source of calories and also reduces the risk of colorectal cancer and hemorrhoids. Jaggery helps in relieving constipation and also improves digestion. Apart from that, consuming jaggery helps in increasing your metabolic rate.
Ingredients:
- 30 grams corn cob
- ½ teaspoon jaggery syrup
- 1 teaspoon lemon juice
- ½ teaspoon garlic paste
- 1/4th cup chopped celery stalk
- 1/4th cup chopped chives
- 10 grams carrot, sliced
- ½ teaspoon paprika powder
- Parsley for garnishing
- Salt to taste

Method:
- Marinate the corn with all the ingredients mentioned above and place in a plastic bag. Vacuum pack the bag.
- Heat water to 64°C and maintain the temperature. You can use a food thermometer for this process.
- Put the bag inside the water.
- Cook for 140-160 minutes.
- Take the corn out and sprinkle parsley, paprika powder and serve.
