Soya Bhurji

Soya Bhurji is a protein-packed, vegetarian version of scrambled eggs made with soya granules. The dish is flavored with traditional Indian spices, making it a tasty and nutritious meal that can be served with roti, paratha, or even stuffed into wraps and sandwiches.
For a Serving Size of Two:
Ingredients:
- 60 grams soya granules
- 50 grams finely chopped onion
- 50 grams finely chopped onion
- 2 teaspoons oil
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- 1 green chili, chopped
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon cumin powder
- 1/4 teaspoon coriander powder
- Salt to taste
- 1 tablespoon chopped coriander leaves (for garnish)
- 200 ml water
Procedure:
- Soak the soya granules in hot water for 10-15 minutes, then drain and squeeze out the excess water. Set aside.
- Heat oil in a pan. Add cumin seeds and mustard seeds, allowing them to crackle.
Add chopped onions and sauté until golden brown. - Add green chili and chopped tomatoes, cooking until the tomatoes become soft and mushy.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Stir well to combine the spices.
- Add the soaked soya granules and mix thoroughly.
- Pour 200 ml water and cook the mixture for 5-6 minutes until the soya absorbs the flavors and water reduces.
- Sprinkle garam masala and mix well. Cook for an additional 1-2 minutes.
- Garnish with chopped coriander leaves and serve hot with roti, bread, or as a filling for wraps.
