Spiced Greeny Salad is a fresh and zesty salad that combines crisp greens, creamy avocado, and crunchy cucumber with a flavorful dressing spiced with cumin and paprika. It’s a perfect light and healthy option for a refreshing side or a nutritious main.
For a Serving Size of Two:
Ingredients:
- 100 grams mixed greens (spinach, arugula, or lettuce)
- 50 grams cucumber, sliced
- 50 grams cherry tomatoes, halved
- 50 grams avocado, diced
- 30 grams red onion, thinly sliced
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp cumin powder
- 1/4 tsp smoked paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- Fresh cilantro for garnish
- Optional: 1 tbsp sunflower seeds or roasted chickpeas for crunch
Procedure:
- Prep the Salad: In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, avocado, and red onion.
- Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, cumin powder, smoked paprika, black pepper, and salt until well mixed.
- Toss the Salad: Pour the spiced dressing over the salad and toss gently to combine, making sure all the veggies are coated in the dressing.
- Garnish and Serve: Garnish with fresh cilantro and optional sunflower seeds or roasted chickpeas for added texture. Serve immediately.
