Spicy Egg Masala

Spicy Egg Masala is a delectable and protein-rich Indian dish featuring hard-boiled eggs that are coated with a medley of spices, then baked or air-fried to perfection. These golden eggs are then simmered in a robust and aromatic gravy made from tomatoes and onions, infused with traditional Indian spices. This dish is ideal for a nutritious and hearty meal, perfect to be enjoyed with steamed rice or warm chapattis.

For a Serving Size of Two:

Ingredients: 

  • 2 hard boiled eggs
  • 1-2 green chilies
  • 1 teaspoon ginger garlic paste
  • 70 grams tomato
  • 70 grams onion
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon red chili powder
  • ½ teaspoon coriander powder
  • ½ teaspoon ground pepper
  • Salt as per taste
  • 1 tablespoon fresh coriander for garnishing
  •  1 teaspoon mustard oil

Procedure:

  • Firstly, take hard boiled eggs and coat them with spices.
  • Now, bake/air fry these eggs till golden brown and cut them to half.
  • To prepare gravy, heat little oil in pan and add ginger garlic paste.
  • Add finely chopped onions and sauté it till golden brown.
  • Add tomato puree and the spices as per taste and cook for few more minutes.
  • Put eggs in the gravy and garnish with fresh coriander.
  • Serve hot along with rice or chapatti.
