Spinach Corn Cutlets

Winters are the perfect time to enjoy some baked samosas and cutlets with hot coffee or tea and so are these delicious spinach corn cutlets. It is an appetizing snack that is tasty, healthy, and easy to prepare. This is one of the best ways to add spinach to kid’s diets if they do not like it. These shallow fried cutlets are filling and perfect for an evening tea-time snack.
For a Serving Size of Two:
Ingredients:
- 100 grams spinach
- 60 grams corn kernels
- 1 medium potato
- 20 grams breadcrumbs
- 1 green chili
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt
- 1 teaspoon oil
- 1 tablespoon besan
Procedure:
- In a bowl, combine the spinach, corn kernels, mashed potato, breadcrumbs, green chili, cumin powder, garam masala, and salt. Mix well to form a dough. If the mixture is too moist, add besan for binding.
- Divide the mixture into small portions and shape them into round or oval cutlets.
- Heat oil in a non-stick pan. Place the cutlets in the pan and cook on medium heat for 3-4 minutes on each side until golden brown and crisp.
- Serve hot with mint chutney.
