Spinach Potato Cakes

Spinach Potato Cakes are a delightful and wholesome snack or meal option. Tender potatoes are mashed and combined with vibrant spinach, spices, and herbs to create flavorful, golden-brown cakes. Pan-fried to perfection, these cakes offer a crispy exterior with a soft, savory filling inside. They pair beautifully with chutney or yogurt, making them a versatile addition to your meal repertoire.
For a Serving Size of Two:
Ingredients:
- 2 peeled and cubed potatoes (about 300 grams)
- 30 grams chopped spinach
- 50 grams finely chopped onion
- 1 finely chopped green chili
- 2 tablespoons fresh coriander leaves
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder
- Salt to taste
- 2 tablespoons besan
- 2 teaspoons oil for cooking
Procedure:
- Boil the potatoes in a pot of water until tender (about 10-15 minutes). Drain and let cool slightly. Mash the potatoes well in a large bowl.
- In a separate pan, heat a small amount of oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onions and green chili, and sauté until the onions are translucent.
- Add the chopped spinach and cook until wilted and most of the moisture has evaporated. Season with salt.
- Let the spinach mixture cool slightly. Add the spinach mixture to the mashed potatoes.
- Stir in the fresh coriander leaves, turmeric powder, garam masala, red chili powder, and additional salt if needed.
- Gradually mix in the chickpea flour to help bind the mixture. You may need more or less depending on the moisture content of the mixture.
- Take small portions of the mixture and shape them into round or oval cakes, about 1/2 inch thick.
- Heat oil in a non-stick skillet over medium heat. Place the cakes in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Serve the spinach potato cakes hot with a side of chutney, yogurt, or your favorite dipping sauce.
