Spinach Stuffed Baked Tilapia

Spinach Stuffed Baked Tilapia is a flavorful and healthy dish that combines the delicate taste of tilapia with a creamy spinach filling. This nutritious meal is perfect for a weeknight dinner and is both satisfying and easy to prepare.

For a Serving Size of Two:

Ingredients:

  • 2 tilapia fillets (about 150 grams each)
  • 100 grams fresh spinach, chopped
  • 50 grams cream cheese (or Greek yogurt for a lighter option)
  • 1/4 cup (30 grams) grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 teaspoon paprika (optional)
  • Lemon wedges for serving

Procedure:

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet over medium heat, add a small amount of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  3. In a bowl, combine the sautéed spinach, cream cheese (or Greek yogurt), grated Parmesan cheese, lemon juice, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  4. Place the tilapia fillets on a baking sheet lined with parchment paper. Spoon the spinach mixture onto the center of each fillet. Fold the sides of the fillets over the filling to enclose it.
  5. Drizzle olive oil over the stuffed fillets and sprinkle with paprika, salt, and pepper. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
