Spring Green Soup

Spring Green Soup is a light and refreshing soup that highlights the bright, fresh flavors of spinach, peas, and broccoli. It’s a perfect springtime dish, providing a burst of greens packed with essential nutrients. The lemon juice adds a refreshing zing, while the garlic and onions bring depth of flavor. The smooth, velvety texture makes it a soothing meal that’s both nourishing and hydrating.
For a Serving Size of Two:
Ingredients:
- 200 grams chopped spinach leaves
- 150 grams green peas
- 100 grams chopped broccoli florets
- 100 grams diced onion
- 1 tablespoon garlic, minced
- 1 tablespoon olive oil
- 400 ml vegetable broth (or water)
- 1 teaspoon ground black pepper
- Salt, to taste
- 1 teaspoon lemon juice
- 1 tablespoon fresh parsley, chopped (for garnish)
Procedure:
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.
- Add the broccoli florets and green peas to the pot, sautéing for another 2-3 minutes.
- Pour in the vegetable broth (or water) and bring to a boil. Reduce the heat to medium-low and let it simmer for 8-10 minutes, until the vegetables are tender.
- Stir in the chopped spinach leaves and cook for an additional 2-3 minutes, allowing the spinach to wilt and soften.
- Use an immersion blender to purée the soup until smooth. If you prefer a chunkier texture, you can blend partially.
- Add black pepper, salt, and lemon juice. Stir to combine and taste, adjusting seasoning if necessary.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
