Spring Green Soup

Spring Green Soup is a light and refreshing soup that highlights the bright, fresh flavors of spinach, peas, and broccoli. It’s a perfect springtime dish, providing a burst of greens packed with essential nutrients. The lemon juice adds a refreshing zing, while the garlic and onions bring depth of flavor. The smooth, velvety texture makes it a soothing meal that’s both nourishing and hydrating.

For a Serving Size of Two:

Ingredients:

  • 200 grams chopped spinach leaves
  • 150 grams green peas
  • 100 grams chopped broccoli florets
  • 100 grams diced onion
  • 1 tablespoon garlic, minced
  • 1 tablespoon olive oil
  • 400 ml vegetable broth (or water)
  • 1 teaspoon ground black pepper
  • Salt, to taste
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)

Procedure:

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.
  • Add the broccoli florets and green peas to the pot, sautéing for another 2-3 minutes.
  • Pour in the vegetable broth (or water) and bring to a boil. Reduce the heat to medium-low and let it simmer for 8-10 minutes, until the vegetables are tender.
  • Stir in the chopped spinach leaves and cook for an additional 2-3 minutes, allowing the spinach to wilt and soften.
  • Use an immersion blender to purée the soup until smooth. If you prefer a chunkier texture, you can blend partially.
  • Add black pepper, salt, and lemon juice. Stir to combine and taste, adjusting seasoning if necessary.
  • Ladle the soup into bowls and garnish with fresh parsley before serving.
